Description

Ingredients

  • 2 medium sweet potatoes, diced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 eggs
  • Fresh parsley, chopped (optional)


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced sweet potatoes and cook for 10 minutes, stirring occasionally.
  3. Add onion, bell pepper, and garlic. Cook for 5 more minutes.
  4. Season with paprika, salt, and black pepper.
  5. Make small wells in the hash and crack an egg into each well.
  6. Cover the skillet and cook for 5-7 minutes until the eggs are set.
  7. Garnish with fresh parsley if desired and serve hot.

Notes

  • You can substitute regular potatoes for sweet potatoes.
  • Add diced avocado or shredded cheese for extra flavor.
