A hearty and nutritious breakfast dish made with sweet potatoes, vegetables, and eggs.
Ingredients
- 2 medium sweet potatoes, diced
- 1 tbsp olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 eggs
- Fresh parsley, chopped (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced sweet potatoes and cook for 10 minutes, stirring occasionally.
- Add onion, bell pepper, and garlic. Cook for 5 more minutes.
- Season with paprika, salt, and black pepper.
- Make small wells in the hash and crack an egg into each well.
- Cover the skillet and cook for 5-7 minutes until the eggs are set.
- Garnish with fresh parsley if desired and serve hot.
Notes
- You can substitute regular potatoes for sweet potatoes.
- Add diced avocado or shredded cheese for extra flavor.
- Store leftovers in an airtight container for up to 2 days.
