Description
A quick and healthy teriyaki tofu and veggie rice bowl with a sweet, savory glaze. Perfect for a balanced meal.
Ingredients
- 1 block (14 oz) firm tofu, pressed and cubed
- 1 cup cooked brown rice
- 1 cup mixed bell peppers, sliced
- 1 cup broccoli florets
- 1 small carrot, julienned
- 1 tbsp vegetable oil
- 1/4 cup teriyaki sauce
- 1 tbsp soy sauce
- 1 tbsp honey or maple syrup
- 1 tsp minced garlic
- 1 tsp grated ginger
- Sesame seeds and green onions for garnish
Instructions
- Heat oil in a pan over medium heat. Add tofu and cook until golden, about 5 minutes per side.
- Push tofu to one side of the pan. Add garlic and ginger, sauté for 30 seconds.
- Add bell peppers, broccoli, and carrot. Stir-fry for 3-4 minutes until tender-crisp.
- Pour in teriyaki sauce, soy sauce, and honey. Stir well to coat tofu and veggies.
- Serve over cooked rice. Garnish with sesame seeds and green onions.
Notes
- Press tofu for at least 15 minutes to remove excess water.
- Use tamari instead of soy sauce for a gluten-free option.
- Add sriracha for spice if desired.
