Description

A hearty and flavorful Texas tamale pie casserole with layers of seasoned beef, cornbread topping, and melted cheese.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup corn kernels
  • 1 packet taco seasoning
  • 1 box (8.5 oz) cornbread mix
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1 egg
  • 2 tbsp vegetable oil


Instructions

  1. Preheat oven to 375°F.
  2. Brown ground beef with onion and bell pepper in a skillet over medium heat.
  3. Stir in black beans, diced tomatoes, corn, and taco seasoning. Simmer for 5 minutes.
  4. Spread the beef mixture in a greased 9×13-inch baking dish.
  5. In a bowl, mix cornbread mix, milk, egg, and vegetable oil until smooth.
  6. Pour the cornbread batter over the beef mixture.
  7. Sprinkle shredded cheese on top.
  8. Bake for 25-30 minutes or until cornbread is golden and cooked through.
