Description
A hearty and flavorful Texas tamale pie casserole with layers of seasoned beef, cornbread topping, and melted cheese.
Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 cup corn kernels
- 1 packet taco seasoning
- 1 box (8.5 oz) cornbread mix
- 1/2 cup shredded cheddar cheese
- 1/2 cup milk
- 1 egg
- 2 tbsp vegetable oil
Instructions
- Preheat oven to 375°F.
- Brown ground beef with onion and bell pepper in a skillet over medium heat.
- Stir in black beans, diced tomatoes, corn, and taco seasoning. Simmer for 5 minutes.
- Spread the beef mixture in a greased 9×13-inch baking dish.
- In a bowl, mix cornbread mix, milk, egg, and vegetable oil until smooth.
- Pour the cornbread batter over the beef mixture.
- Sprinkle shredded cheese on top.
- Bake for 25-30 minutes or until cornbread is golden and cooked through.
Notes
- Use lean ground beef for a healthier option.
- Add jalapeños for extra spice.
- Replace black beans with pinto beans if preferred.
