Description
Fluffy pancakes layered with coffee and mascarpone for a tiramisu twist.
Ingredients
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 egg
- 3/4 cup buttermilk
- 2 tbsp melted butter
- 1 tsp vanilla extract
- 1/2 cup strong brewed coffee, cooled
- 1/2 cup mascarpone cheese
- 1 tbsp cocoa powder
Instructions
- Whisk flour, sugar, baking powder, baking soda, and salt in a bowl.
- In another bowl, mix egg, buttermilk, melted butter, and vanilla.
- Combine wet and dry ingredients. Stir until just mixed.
- Heat a pan over medium heat. Pour 1/4 cup batter for each pancake.
- Cook until bubbles form, then flip and cook until golden.
- Layer pancakes with a spread of mascarpone and a drizzle of coffee.
- Dust with cocoa powder before serving.
Notes
- Use cold coffee for a stronger flavor.
- Let the batter rest for 5 minutes before cooking.
- Adjust sugar to taste.
