Description
A quick and tasty plant-based breakfast wrap filled with scrambled tofu, veggies, and spices. Perfect for a healthy morning meal.
Ingredients
- 200g firm tofu, crumbled
- 1 tbsp olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 1 tsp turmeric
- 1/2 tsp cumin
- Salt and pepper to taste
- 2 large whole wheat tortillas
- 1/2 avocado, sliced
- Handful of fresh spinach
Instructions
- Heat olive oil in a pan over medium heat.
- Add diced onion and bell pepper. Sauté for 3 minutes.
- Crumble tofu into the pan. Stir well.
- Add turmeric, cumin, salt, and pepper. Cook for 5 minutes.
- Warm tortillas in a dry pan for 30 seconds each.
- Divide tofu scramble between tortillas.
- Top with avocado slices and fresh spinach.
- Fold tortillas into wraps. Serve immediately.
Notes
- Press tofu for 15 minutes before cooking to remove excess water.
- Add hot sauce for extra flavor.
- Use gluten-free tortillas if needed.
