Description

A quick and tasty plant-based breakfast wrap filled with scrambled tofu, veggies, and spices. Perfect for a healthy morning meal.


Ingredients

  • 200g firm tofu, crumbled
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 tsp turmeric
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 2 large whole wheat tortillas
  • 1/2 avocado, sliced
  • Handful of fresh spinach


Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add diced onion and bell pepper. Sauté for 3 minutes.
  3. Crumble tofu into the pan. Stir well.
  4. Add turmeric, cumin, salt, and pepper. Cook for 5 minutes.
  5. Warm tortillas in a dry pan for 30 seconds each.
  6. Divide tofu scramble between tortillas.
  7. Top with avocado slices and fresh spinach.
  8. Fold tortillas into wraps. Serve immediately.

Notes

  • Press tofu for 15 minutes before cooking to remove excess water.
  • Add hot sauce for extra flavor.
  • Use gluten-free tortillas if needed.
