Ingredients
- 2 cups cooked, shredded chicken
- 1 cup shredded cheese
- 1 cup enchilada sauce
- 8 small tortillas
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the shredded chicken, half of the cheese, onions, bell peppers, cumin, chili powder, salt, and black pepper.
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the rest of the cheese.
- Bake for 20 minutes or until the cheese is melted and bubbly.
- Serve hot and enjoy.
Notes
- You can use store-bought rotisserie chicken for convenience.
