Description

A flavorful plant-based taco recipe using jackfruit as a meat substitute. Easy to prepare and packed with taste.


Ingredients

  • 2 cans of young green jackfruit, drained and rinsed
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp smoked paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 cup vegetable broth
  • 8 small corn tortillas
  • 1 avocado, sliced
  • 1/2 cup fresh cilantro, chopped
  • 1 lime, cut into wedges


Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Shred the jackfruit using your hands or a fork.
  4. Add jackfruit, smoked paprika, cumin, chili powder, and salt to the pan. Stir well.
  5. Pour in vegetable broth and cook for 10 minutes, stirring occasionally.
  6. Warm the tortillas in a dry pan or microwave.
  7. Assemble tacos with jackfruit, avocado, and cilantro.
  8. Serve with lime wedges.
