Ingredients

  • 1 lb beef stew meat, cubed
  • 4 cups beef broth
  • 2 cups water
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 potatoes, cubed
  • 1 cup green beans, trimmed and cut
  • 1 can (14.5 oz) diced tomatoes
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf


Instructions

  1. Heat oil in a large pot over medium heat. Brown the beef cubes on all sides.
  2. Add the onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in the garlic, salt, pepper, and thyme. Cook for 1 minute.
  4. Pour in the beef broth and water. Add the bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 1 hour.
  6. Add the potatoes, green beans, and diced tomatoes. Simmer for another 30 minutes.
  7. Remove the bay leaf and serve hot.

Notes
