Description
Make delicious brownies using leftover fruit and vegetable pulp for a zero-waste twist. These pulp brownies are moist, chocolatey, and eco-friendly.
Ingredients
- 1 cup fruit or vegetable pulp (carrot, apple, or zucchini work well)
- 1/2 cup melted butter or coconut oil
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup all-purpose flour
- 1/3 cup cocoa powder
- 1/4 tsp salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.
- In a bowl, mix melted butter, sugar, eggs, and vanilla until smooth.
- Add pulp and stir well.
- Sift flour, cocoa powder, and salt into the mixture. Fold gently.
- Stir in chocolate chips if using.
- Pour batter into the pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Cool before cutting.
Notes
- Use any leftover pulp from juicing.
- Adjust sugar based on pulp sweetness.
- Store in an airtight container for up to 3 days.
