Description

Make delicious brownies using leftover fruit and vegetable pulp for a zero-waste twist. These pulp brownies are moist, chocolatey, and eco-friendly.


Ingredients

  • 1 cup fruit or vegetable pulp (carrot, apple, or zucchini work well)
  • 1/2 cup melted butter or coconut oil
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/4 tsp salt
  • 1/2 cup chocolate chips (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. In a bowl, mix melted butter, sugar, eggs, and vanilla until smooth.
  3. Add pulp and stir well.
  4. Sift flour, cocoa powder, and salt into the mixture. Fold gently.
  5. Stir in chocolate chips if using.
  6. Pour batter into the pan and spread evenly.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Cool before cutting.

Notes

  • Use any leftover pulp from juicing.
  • Adjust sugar based on pulp sweetness.
